This is a great recipe for leftovers at any time of the year.

Ingredients:

2-3 pounds cooked chicken, turkey or pork, cut into 1" cubes
1/2 cup (1 stick) butter
1 medium yellow onion, chopped
1/4 cup chopped leeks
1 teaspoon garlic
1 teaspoon sage
2 teaspoons thyme
2 tablespoons flour
5 cups milk
1 pound frozen peas
2 boxes stuffing mix, prepared

Directions:
1. Preheat oven to 350 F.
2. Melt butter in large pan on stove. Add onion, leeks and garlic. Cook until onion is translucent.
3. Add chicken and spices.
4. Sprinkle flour over mixture and stir.
5. Slowly add milk on medium heat, stirring to make thick & creamy sauce.
6. Add frozen peas, stir and bring to a simmer.
7. Spoon mixture into 9 x 13 glass baking dish. Top with prepared stuffing, spreading out to edges pan.
8. Place in oven for 30 minutes or until stuffing starts to brown. Remove from oven and let sit for 5 minutes before serving.
