I'm a big fan of fancy desserts.BUT... there are times when you just need something quick, easy and still delicious!That's the kind of recipe I have for you today.

In fact, I have a hard time even calling it a "recipe", when it only has three ingredients...Rolo (store bought chocolate/caramel candies), pretzels and pecan halves.Bottom line, if you just threw those three things in a bowl it would be pretty yummy!

For these tasty treats, all you have to do is lay the pretzels on a baking sheet (I used these cute square ones, but the mini twists would work too). Top each pretzel with an unwrapped Rolo candy. Bake in the oven at 250*F for 4-5 minutes (no longer).

When you remove them from the oven, the Rolo will still be in the same shape as when it went in the oven. Place a pecan half on top of the Rolo and press down a bit. Top each Rolo with one pecan half.
Place the entire baking sheet in the freezer for about 5-7 minutes to allow the Rolo to cool.
Remove from freezer and enjoy! Or place in a container to enjoy later. These will last several days- probably more, but they've never lasted that long in our house!

These are so delicious! A great sweet-salty combo.

A fresh way to feed your spring appetite!

Ingredients:
  1 watermelon, cut in long chunks
  1 cantelope, cut in long chunks
  1 quart whole strawberries
  1 pound green grapes
  1/4 cup orange juice
   Mint sprigs

Directions:

   Place all fruit in bowl or casserole. Pour orange juice over fruit and mix gently. Add mint. Serve immediately.

Raw Lasagne

This will make 4 servings
... 
White sauce (Dana's Note: AWESOME!)
2 C cashew raw cashew nuts (soaked overnight and drained)
1/2 tsp basil (dried)
1/2 tsp oregano (dried)
1/2 tsp sea salt
1/4 -1/2 C water
Put all ingredients in a blender and blend away for 1-2 min until creamy. Put aside in a bowl.

Tomato sauce
1 1/2 C of Italian sundried tomatoes (not in oil) soaked in warm water for 10 min and then drained.
oregano
2 tsp olive oil
1/2 C water or as needed
1/4 tsp salt
Put all ingredients in a blender and blend away for 1-2 min until creamy. Put aside in a bowl.

Pesto
2 C fresh basil
1/2 cup pine nuts
1-2 cloves garlic
1/2 C sunflower seeds
1/2 C olive oil or as needed
Salt
Put all ingredients in a blender and blend away for 1-2 min until creamy. Put aside in a bowl.

3 - 4 med zucchini sliced thinly longways with a peeler (this is the lasagne 'pasta')
6-8 ripe tomatoes sliced thickly 
basil leaves

Layer 4 strips of zucchini on a plate. Top with 4 slices of tomato, sprinkle with salt. Spoon over a line of the white sauce, beside it a line of the tomato sauce and finally and line of pesto. Layer again with zucchini strips and repeat.

Dana's NOTE: Make sure you're only using a "line" of white sauce and not a whole "layer" . . . three lines across = 1 layer.

Finally top with a wedge of tomato, basil and drizzle with olive oil. Repeat on remaining 4 plates.

One more note . . . now that I've made it once, I'm going to do it again with English Cucumbers as another layer. (Less seeds than other cucumbers.)

Tired of salad! This is the substitute! :) 

 
GIRL SCOUT COOKIE BEAN POT CAKE
1 pkg. Dark Chocolate Fudge cake mix, Moist Supreme or Deluxe
Eggs, Oil and Water according to package directions

1 tub Dark Chocolate Fudge frosting
10 - 12 Thin Mints or Do Si Dos

Empty dry cake mix into Bean Pot. 
Add eggs, oil and water, according to package directions. 
Stir well with a wooden spoon, breaking up lumps.
 Fold cookies into batter. 
Drop 6 - 8 heaping spoonfuls frosting on top of batter. 
Put the lid on your Bean Pot and Microwave 7 ½ - 10 minutes, depending on microwave...check for doneness at 7½ minutes. 
When done, let sit for 5 minutes, then gently fold frosting through cake!
